Wright's Favorite Coconut Cake
- 1 pkg. butter cream
cake mix
- Substitute milk for
water: bake as directed: makes three layers
- Juice of 2 oranges
- 1/2 cup sugar
- Mix well: pour on
once over each layer as you begin to stack the cake.
- Icing
- 1 1/2 cups sugar
- 1/2 pint sour cream
- 1 1/2 pkgs. frozen
coconut 12 oz size
- Mix ingredients
listed above and spread over each layer, top and side of
the cake...
- Delicious!

Green Congealed Salad
Mash up cream cheese
in a pyrex dish, sprinkle jello mix over the cream cheese, pour 3
cups of boiling water and mix well, then put in the miniature
marshmellows when it begins to jell a little put in the pecans..
Cool in the refrigerator until completely jelled..

Pecan Pie
Mix
ingredients listed above well pour into an unbaked pastry pie
shell and bake in 350°oven for 45 to 50 minutes. Cool and top it
with whipped cream or ice cream. We like it hot without ice
cream. With a glass of iced tea or a cup of coffee.
Mississippi
Mud Cake
- 2 sticks
butter
- 1/2 cup cocoa
- 2 cups sugar
- 4 eggs,
slightly beaten
- 1- 1/2 cups
flour
- 1- 1/2 cups
chopped nuts
- 1 tsp.
vanilla
- 1 lb.
powdered sugar
- 1/2 cup milk
- 1/3 cup cocoa
- 1/2 cup
melted butter
- Melt butter
and cocoa. Remove from heat. Stir in sugar and beaten
eggs. Add flour, salt, nuts and vanilla. Mix well. Spoon
batter into greased pan, 13x9x2- inch. Bake at 350
degrees for 35 to 45 minutes. Sprinkle marshmellows on
top of warm cake and then cover with frosting. Combine
sugar, milk, cocoa and butter. Mix well and spread on
cake.

- Easy Peach Cobbler
- 1/2 cup
butter
- 2 cups sugar
- 1 cup
self-rising flour
- 1 can peaches
- 1 cup sweet
milk ( for non-Southerners this is Whole milk)
- Crust: Melt
butter in saucepan. Set aside. Mix 1 cup sugar, flour and
milk. Pour over butter. Do not stir. Mix peaches and 1
cup sugar in saucepan. Bring to a boil. Pour over crust
mixture. Do not stir or mix. Place in oven at 350 degrees
for 30 minutes or until brown...

Cream Cookies
- 1 cup
shortening
- 2 cups sugar
- 3 well beaten
eggs
- 1 tsp.
vanilla
- 1 cup sour
cream
- 5 cups sifted
all-purpose flour
- 3 tsp. baking
powder
- 1 tsp. salt
- 1/2 tsp. soda
- 1- 1/2 cup
broken pecans
- 3 Tbsp. sugar
- 1 tsp.
cinnamon
- Cream
shortening and 2 cups sugar. Add eggs, vanilla and sour
cream. Mix well. Sift flour with baking powder, salt and
soda; add to creamed mixture. Add nuts. Drop from
teaspoonfuls onto greased cookie sheet. Grease bottom of
small glass; dip into mixed sugar and cinnamon; press
cookie flat. Bake at 350 degrees for 15 minutes. Makes 6
dozen cookies.

- FROSTING:
- 2 1/2 cups
milk
- 1 1/2 cups
sugar
- 6 squares (1
oz. each) unsweetened chocolate
- 1/4 cup
cornstarch
- 2 tablespoons
water
- 3 tablespoons
butter or margarine
- 1 1/2
teaspoons vanilla extract
- CAKE:
- 4 squares (1
oz. each) unsweetened chocolate
- 1 1/2 cups
all purpose flour
- 2 cups sugar
- 2 teaspoons
baking powder
- 1 teaspoon
salt
- 1/4 teaspoon
baking soda
- 1/4 cup
shortening
- 1 1/2 cups
milk
- 2 eggs
- 1 teaspoon
vanilla extract
DIRECTIONS
Frosting:
Scald milk in heavy sauce-pan. Add sugar and chocolate.
Dissolve cornstarch in water; stir into milk. Cook and
stir over medium heat until mixture comes to a boil.
Reduce heat cook 1 minute longer. Remove from heat; stir
in butter or margarine and vanilla. Cool to room
temperature, stirring occasionally, then cover and
refrigerate until thoroughly chilled, at least 3 hours.
Cake:
Grease and flour three 8 - inch round cake pans. Preheat
oven to 350 degrees F. Melt chocolate over hot, not
boiling water. In a large mixer bowl combine dry
ingredients. Add shortening and 3/4 cup milk. Blend on
low speed of mixer, then increase speed to medium and
beat 2 minutes. Add remaining milk, eggs, vanilla and
melted chocolate. Beat 2 more minutes. Spoon batter
evenly into pans. Bake 20 to 25 minutes or until center
springs back when pressed lightly with fingertip. Cool in
pans 5 minutes, then turn out onto wire racks to cool
completely. Fill and frost with Chocolate Frosting. Store
leftover cake in refrigerator. Makes 8 to 10 servings,
about 780 calories per 8 and 640 per 10.

- Asparagus
Casserole
- 2 cans
asparagus
- 1/4 cup of
milk or less
- 1 can cream
of mushroom soup
- 1 cup grated
Cheddar Cheese
- 2 sleeves of
saltine crackers
- Layer
crumbled crackers, then layer one can of asparagus, a
layer of mushroom soup (half the can), then 1/2 cup
cheese, grated. Repeat and add milk, if needed, for
moisture. Cook at 350° until it bubbles. Serves 6 to 8.

Spanish Rice
- 1 lb. ground
chuck
- 1 cup
uncooked rice
- 1 medium size
bell pepper
- garlic salt
or chopped garlic button
- dash of
Worchestershire sauce
- 1 stalk
celery, chopped (optional)
- 1 1/2 tsp.
salt
- Brown meat in
skillet. Add other ingredients and add water to the top
of the mixture.
- Cook on
simmer for 30 minutes. Must stir occasionally to keep
from burning. Makes 6 to 8 servings.

- 1 1/2 lb.
ground chuck
- 1 onion,
chopped
- 1 egg
- 1/2 tsp. salt
- 1/2 tsp.
pepper
- 1/2 cup
tomato juice
- 1/2 cup
ketchup (to pour over)
- Mix all
ingredients well in large bowl. Form in loaf pan. Pour
ketchup over top. Bake at 400° for 1 1/2 hours

Neiman-Marcus Cookie
2 cups butter
4 cups flour
2 tsp. soda
2 cups sugar
5 cups blended oatmeal**
24 oz. chocolate chips
2 cups brown sugar
1 tsp. salt
1 8 oz. Hershey Bar (grated)
4 eggs
2 tsp. baking powder
3 cups chopped nuts (your choice)
2 tsp. vanilla
Cream the butter and both sugars.
Add eggs and vanilla; mix together with flour, oatmeal, salt,
baking powder, and soda. Add chocolate chips, Hershey Bar and
nuts. Roll into balls and place two inches apart on a cookie
sheet. Bake for 10 minutes at 375 degrees. Makes 112 cookies.
** measure oatmeal and blend in a
blender to a fine powder.
